My One Pot, Lowfat, Homeade Alfredo

Hey friends, happy FRI-YAY! I have had such a week, but am so happy to share this recipe with y'all today because I've finally gotten it to a place where I think it's ready to share, because I know I've really enjoyed it. Most alfredo sauces are made with heavy cream and cream cheese, but mind just calls for low fat cheese, skim milk, and a bit of flour to thicken it up. I promise you, when I first heard skim milk and low fat cheese I thought YUCK, but Y'ALL, it so good. It's light and creamy and a little spicy if you want it to be. I've made it with both chicken and shrimp and loved it both ways, so I recommend you make it with whatever you've got on hand.

 This one pot recipe is super easy to make, and comes together quickly, but does require a bit of prep beforehand to make sure everything goes smoothly. Especially with shrimp, things go quickly, so you'll want to have everything pre-measured and ready to go! I hope you enjoy it as much as I have - I love the fact that I can have comfort food without having to feel so guilty or bloated after!
